Baked Mini Chickpea Patties


Makes 8 mini patties


  • 2 cups of cooked chickpeas ( or 1 can)

  • 1 large onion

  • 3-5 green onions

  • 1/2 cup of chopped parsley

  • 1/2 tbsp of flour

  • 1/2 cup of bread crumbs ( other options can be 1/2 of any of the following: oat flour, wheat germ or quinoa flakes)

  • 1 egg (optional)

  • 2 tbsp. of olive oil

  • Juice of half a lemon

  • Condiments - salt, pepper, chili pepper, cardamon, cumin - 1/2 tsp. of each


  1. Preheat oven. Set at 400 degrees ° F .

  2. Chop 1 large onion and add to previously heated saucepan with a tbsp. of oil. Sauté onions until golden and set aside

  3. Chop green onions into small pieces (white and green parts)

  4. Whisk egg in a separate bowl. * You can also makes these patties with no eggs if preferred.

  5. In a large bowl add cooked chickpeas, sautéed onions, chopped green onions and parsley. Mix well.

  6. At this stage, I usually add half the above mixture in a food processor until smooth. The other half and mash with a folk. I like it better this way as it gives the patties more texture!

  7. Next, add breadcrumbs, flour as well as salt, pepper, chili pepper, cardamon, cumin and juice of lemon. Add eggs (optional). Mix to combine all ingredients.

  8. Grease a baking sheet and add chickpea mixture - 8 small patties. Brush patties with olive oil.

  9. Bake in oven at 400 ° F for 20 minutes until golden & cooked through! Be sure to flip the patties half way through the cooking time.
