Baked Figs & Feta with Balsamic Reduction, Rosemary and Roasted Walnuts

Recipe

Serves 5

Ingredients:

  • 10 figs

  • 3/4 cup feta cheese

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon of honey (optional)

  • 1/4 cup walnuts, chopped

  • Rosemary springs

  • Balsamic reduction for drizzle

  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350°F

  2. Cut figs in half and add to a baking sheet

  3. Place 1/2 cup of feta in the centre and add the rest on top on the figs

  4. Drizzle with 2 tablespoons of olive oil

  5. If desired, drizzle 1 tablespoon of honey over feta placed in the middle of the baking sheet (honey is optional)

  6. Add salt, pepper to taste and balsamic reduction all over

  7. Place 1-2 rosemary springs on top

  8. Sprinkle with chopped walnuts

  9. Bake for 25 minutes in oven

  10. Once baked, add some more balsamic reduction drizzle Serve warm with sourdough toast or crackers!
