Christmas definitely looked very different this year. For us, Christmas was cozy & quiet with just our immediate household. It was a time for connection & reflection. This pandemic has forced us to focus on finding joy in our every days, even when it’s hard. My family has personally lost so much & learned so much.


What has helped us the most is acknowledging that there are so many journeys and realities that are so much more difficult than ours. Also, reminding ourselves that we all need to do our part and if what we are doing may save a person’s life, it’s all worth it.


My heart goes out to each individual that is struggling & staying hopeful for better & brighter days in the new year!



I think for many of us, when we think of cookies for Christmas, gingerbread cookies come to mind. I made these with my three year old last week, but never got around to writing up the recipe. So here it finally is! I was super excited to try these with blackstrap molasses, which are a nutrition-packed and flavourful food, especially for vegetarians! Nutrition-wise, blackstrap molasses are a good source of Iron, calcium & potassium.

Recipe⠀⠀⠀⠀⠀⠀⠀⠀

Makes 12 Cookies

⠀⠀⠀⠀⠀⠀⠀ Ingredients:


-2 cups of almond flour

-1/2 cup of regular flour (try tapioca flour for gluten-free)

-1/2 cup melted coconut oil

-1/4 cup pure maple syrup

-1/4 tsp salt

-2 tbsp blackstrap molasses for a spicy taste ( for a milder taste you can also use regular molasses)

-1 tsp baking soda

-1/2 tsp cinnamon

-1/2 tsp vanilla extract

-1/2 tsp ground cardamom

-1 tsp ground ginger ⠀⠀

Directions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1-Preheat oven to 350°F

2- In a medium bowl, combine all dry ingredients including almond flour & regular flour, baking soda, salt, cinnamon, ginger, and cardamom. Mix well.

3- In another bowl, whisk together wet ingredients ( melted coconut oil, blackstrap molasses, pure maple syrup, vanilla extract)

4- Add dry ingredients into the wet ingredients and mix well until a dough is formed

4- Wrap dough tightly in plastic wrap and freeze for at least 60 minutes to make firm

5- Take out dough from freezer & place on a sheet lined with parchment paper and sprinkled with flour to prevent from sticking. Add more flour to roller, hands and dough.

6- Roll dough into flat sheet & cut into shapes with cookie cutters

7- Bake for about 10-12 minutes. Allow to cool completely before serving & enjoy! :)⠀⠀
